crawfish mac & cheese {recipe}

I have been a BBQ  cooking queen so far this summer and recently had several requests for my Crawfish Mac & Cheese recipe.  Ask and ye shall receive...



This is a great summer bbq dish for seafood lovers near and far!

Ingredients

  • 1 egg
  • 1.5 cups 2% milk
  • 1 can evaporated milk
  • 2 tablespoons butter
  • 4.5 tablespoons of flour
  • 2 tablespoons minced onion
  • 12-13 ounces of  shell noodles
  • ½ cup shredded mozzarella
  • ½ cup shredded parmesan
  • ½ cup shredded white cheddar
  • ¼ cup shredded smoked mozzarella
  • ½ cup shredded Italian cheese blend
  • 1 lb cooked crawfish tail meat (chopped)
  • 2 tablespoons Cajun seasoning (Tony’s Creole Seasoning)
  • Cheese powder pack (from store brand box of white cheddar mac & cheese)
  • Salt and pepper (to taste)

Directions


1) Bring a pot of water to boil. Add noodles and cook until al dente. Drain then set aside.

2) Remove crawfish tails, peel, and chop (you can purchase pre-peeled crawfish tails if you prefer).

3) In a skillet on medium-high heat onion and cook for 3 minutes. Reduce heat to medium and add butter then flour. Stir then add 2% milk and ¼ cup of evaporated milk. Whisk until mixture is a thick sauce (5-7 minutes).

4) Reduce heat to low, add crawfish, about ¼ of each cheese, Cajun seasoning, and salt/pepper. Stir until cheese is melted. Then remove from heat.

5) In a bowl mix remaining evaporated milk, egg, and cheese sauce packet. Whisk until blended.

6) Spray baking dish with non-stick spray then sprinkle a handful of cheese on the bottom. Add noodles, crawfish cheese sauce, and shredded cheeses (be sure to save a handful of each cheese for the top layer). Mix then add the milk cheese sauce mixture from your bowl.

7) Preheat oven to 350 degrees. Add the remaining cheese to the top creating a cheese layer. Then sprinkle breadcrumbs on top. Cover with foil and bake for 15 minutes; then uncover and allow to bake for an additional 10-15 minutes or until breadcrumbs are brown.
